Delicious Pumpkin Bread Recipe for Fall
It’s Fall, so this delicious pumpkin bread recipe is top on my list, as it is most years. It’s moist and tasty. Not too sweet. You can add raisins or nuts, or leave them out. It’s perfect for a cool fall or even winter morning with a hot cup of coffee. And the recipe makes three breads, which is good because it’s addictive. Don’t say I didn’t warn you.
Tin Can Pumpkin Bread

Ingredients
- 3 cups flour
- 2 teaspoons baking soda
- 1 teaspoon ground nutmeg
- 1 teaspoon cinnamon
- 1 1/2 teaspoons salt
- 3 cups sugar
- 4 eggs
- 1/4 cup water
- 1 cup vegetable oil
- 1 16-oz can pumpkin
- 1/2 cup chopped walnuts (optional)
Instructions
- Preheat oven to 350 degrees
- Spray insides of 3 coffee cans* (see note) with cooking spray. Coat all surfaces well. If using loaf pans, spray bottoms only.
- Combine all dry ingredients in a large bowl.
- Mix
- Add wet ingredients
- Mix until blended
- Pour evenly into 3 coffee cans or loaf pans
- Cook 1 hour or until a toothpick inserted in center comes out clean
- Cool ten minutes before serving.
Notes
*Can be eaten warm or fully cooled. My family prefers it completely cooled.
*Can be frozen. Use within 3 months.
*A special warning: This recipe calls for the use of three coffee cans. This is, of course, optional. You can use regular loaf pans, but the coffee cans really do seem to make this pumpkin bread more moist. The caveat is this: It’s getting more and more difficult to find true metal coffee cans. When I first started making this recipe thirty years ago, all coffee came in cans. Now most of those containers are plastic or some version of stiffened cardboard. Take care to only use true metal coffee cans or you might set the oven or house on fire.
