an Old Fashioned Banana Bread Recipe, (known back in the days as a tea loaf and meant to be sliced thin and spread with butter before eating.) Enjoy!
1 cup sugar
2 medium-sized VERY RIPE (brown speckled) bananas
1/2 cup butter, melted
1/4 cup buttermilk (you can use regular milk)
1 teaspoon vanilla
2 eggs
2 cups flour
1 teaspoon baking soda
1/2 teaspoon salt
Walnuts (optional) …as many as you’d like. We use about 2/3 cup
Oven to 350. Grease the bottom only of a loaf pan. In a large bowl mix the first 6 ingredients then stir in the remaining ingredients JUST UNTIL MOISTENED. The key to a good bread is not to over mix it. If you do you will make it tough.
Pour into loaf pan and bake for 55-60 minutes. Cool 5 minutes before removing from pan.
Allow to cool completely before slicing. Otherwise it will tend to crumble. Freezes well, so make a few at once.
